Thigh & Onion - ねぎま

Green onions, or if you're lucky Japanese negi, sandwiched between pieces of dark thigh meat with a piece of chicken skin stretched over the top. Negima is a classic yakitori skewer in Japan that can be found in izakayas, food stalls at festivals or even a convenience store. We chose this style of wrapping the skin over the meat and onions to try and keep the skin crisp and the meat succulent.
